Kiss Me Quick Hummus

Belly dance class starts again soon and I’m all set to go. I’ve secured the coins on my jingly hip scarf and have finally found the bumper sticker I filed away for safe keeping (okay, lost) until the start of the new session. It reads “Belly Dancer on board. Vehicle may shimmy without warning!” With the promise of Middle Eastern music and some new moves to add to my repertoire, the only thing missing is a good, tone-setting meal. I’ve been thinking of hummus for days now and just might have to make some for lunch.

Many people make hummus with enough garlic to knock an elephant flat. So, I created a version that’s got enough garlic to taste authentic but still leaves you kissable. And we belly dancers are a kissable lot! Oh yes, I substituted sour cream for tahini, so there’s no trip to the specialty shop either.

Kiss Me Quick Hummus

Ingredients

  • 1 (19 oz) can chick peas, drained (about 2 cups)
  • 1 tsp dried cumin powder
  • 1 –2 cloves garlic, crushed (number depends on size of cloves and your level of adventure)
  • 4 tbsp lemon juice
  • 2 tsp olive oil
  • 2 tbsp sour cream or enough to make desired texture
  • salt and pepper to taste

Instructions

  1. Put all ingredients into a food processor and pulse to desired texture. Or use a hand held blender and mix right in the serving bowl.
  2. Serve with pita or veggies and copious quantities of wine.
  3. Pucker up.
