Reader Question – A Double-Decker Challenge

This past week I’ve faced the challenges of my husband’s junk food obsession. I must have done a good job since he enjoyed an “unprovoked salad” just to have the homemade ranch dressing. However, I’m now stuck.

This week’s Reader Question comes from a former colleague and is a double-decker dilemma. This grandfather and grandson team eats together often and has to work around multiple dietary challenges. They eat poached salmon so often, grandpa’s been dubbed King of Salmon. Toss in a child’s dislike of spices and anything beyond plain meat and salad seems impossible.

I’ve edited the email below to protect identities, but the gist is all there. Grandpa the Salmon King writes:

I have a grandson, 7, and he must eat a gluten-free, casein- free diet (no wheat, no dairy). This is a challenge because of food labeling. In the bulk food store they sell gluten-free flour, supposedly, but it is not. The effects on [my grandson’s] behavior after he eats dairy or wheat products is astonishing. It takes 2 days for him to get back to normal.

As for me, I am not supposed to eat anything white, like processed flour, sugar, rice or potatoes. In other words I try to stick to low-GI foods or a diabetic diet. Also, no root vegetables. As for meat, I stick to lean pork, chicken or turkey. I was raised on beef but I can no longer tolerate it. It is all rather tricky.

Any ideas for a low-GI, gluten-free, dairy-free, not-too-spicy meal this multi-generational family can share? I’m out of hyphens and ideas, so it’s over to you.
