Shrove Tuesday

Shake up the old Batter Blaster. It’s Shrove Tuesday. This means there’s pancakes for supper and no one will stop you from having seconds or even thirds. In some circles, it’s even encouraged — but be warned. They’ll take gorging as a sign you intend to give up something really important for Lent – like chocolate or coffee or oxygen.

I know I should probably post a nutritious recipe for zucchini pancakes or some other vegetable inspired flapjack. But Pancake Tuesday comes but once a year, so why not carbo-load like there’s no tomorrow? After all, if you observe Lent, there is no sugar and fat or the next 40 tomorrows.

If the buttermilk pancake recipe I posted with the above link doesn’t appeal, try this cornmeal version. Don’t limit yourself to dousing them in maple syrup. Load on some sour cream and berries. Or take your cue from Batter Blaster and indulge in Banana & Nutella Pancakes in Hot Buttered Rum Sauce. Only your pancreas will know.
