Whisky Works – As the Barrel Turns (Episode 4)

A momentous day for As The Barrel Turns. Having completed the first full rotation, Dr. Andrew Thomson succumbed to public pressure and sampled his Whisky Works project.

Initial excitement quickly turned to frustration when the cask failed to yield its contents. Remembering his fifth grade physics lesson, Thomson removed the top cork. This bold initiative released air pressure and the whisky indeed began to flow. “Those three years of Grade 5 science finally paid off,” Thomson boasts.

First thing Dr. Thomson noticed was the whisky had indeed darkened after a mere month of hibernation. “Time has begun to round the edges,” Thomson notes, quickly adding, “but this cask-strength whisky still bites back.”

Thomson paused to note, “On the nose and on the tongue, the peat is still powerful enough to fight through the cat allergies.”

Not one to leave sleeping whisky lie, Thomson added a touch of water that released hints of caramel with a smoother finish.
