Whisky Works – As the Barrel Turns (Episode 3)
This week, As the Barrel Turns got mail. Given the comment that poured in, serious consideration was given to sampling at this stage of the process. A willing but wary Dr. Andrew Thomson says, “I’m concerned that frequent and repeated sampling will leave me an empty barrel come September.”
Not one to rely solely on his own expertise, Thomson brought in a team known for their keen noses, in hopes of sniffing out the answer to the age-old scotch-turning question, what would St. Andrew do?

Thomson and his whiskered whisky team concluded that St. Andrew would not approve of sampling mid-rotation. “If you appeal to the patron saint of Scotland,” Thomson says,”you must be prepared to finish the round.” With this in mind, Thomson will test the waters of life next week once the barrel has turned full circle.
