Spicy Roasted Cauliflower with Cilantro Dressing

A local Indian restaurant makes an addictive appetizer -- bite-sized vegetables dipped in a spicy chickpea batter, deep fried and served with a cilantro dipping sauce. Whenever Andrew and I dine there, I pluck all the cauliflower florets from the plate and eat them myself....

Raw Sweet Potato Salad - The Messy Baker
Raw Sweet Potato Salad

Sweet potatoes are confusing. People call them yams, but they're not. Even though you're far more likely to encounter a sweet potato than a yam here in North America, I think we embrace the term "yam" because it's more fun to say. Weighing in at...

Oven-Dried Tomatoes
Oven-dried tomatoes - TheMessyBaker.com Brain, meet Fingers. Fingers, meet Brain. I hope you two become best of friends. Pronto. Because if you don't start working together really soon, I will be forced to give up this blog and move to a remote region of the world where there is no Internet access and only tinned soup for supper. What did I do this time? Despite finding the recipe in the index, reading the instructions and looking at the photo, my fingers typed "oven-roasted" tomatoes when Grow Great Grub clearly gives readers the low down on "oven-dried" tomatoes. I'm tempted to quietly correct this error and distract you with ice cream. But having asked you to vote and promising to post the results, I think you'd notice. Especially since the one recipe whose title I botched turned out to be the winner. So, for those of you who were looking forward to oven-roasted tomatoes, here's a refresher on how to roast vegetables. For the tomato version, I'd add chopped fresh basil, some crushed garlic, a pinch of salt and fresh ground pepper. When done, top with grated Parmigiano-Reggiano. And for those who intuitively knew what I meant, here is the recipe for oven-dried tomatoes. They're different, but just as good. And last longer.
Easy Roasted Lemon Potatoes - The Messy Baker
Easy Roasted Lemon Potatoes

I have decided to strike the following phrase from my vocabulary: How hard can it be? It gets me into trouble. For example: Hey, honey, I need a new stove. Why don't we just knock down a wall and add an eat-in kitchen while we're at it....

Chocolate Chip Mousse
Easy Chocolate Chip Mousse - TheMessyBaker.com Late on Sunday afternoon I did the unthinkable. I made chocolate mousse without high-end chocolate. Company was coming.  The oven was occupied with Apple Roasted Chicken. And I had very little time to devote to dessert. So, I opened the baking cupboard and grabbed the first thing I saw -- a bag of semi-sweet chocolate chips. What can you do with chocolate chips, a stove top and half an hour kitchen time? Make mousse. And dang, if it didn't turn out more than a little okay.

Maple-Roasted Chicken Breasts

This hardly looks like a substitute for chicken wings, but I assure you, if your mouth wants honey-garlic drumettes and your brain balks at deep-frying, this variation on pub grub will keep every body happy -- low-fat roasted chicken for your waistline and a tangy-sweet...

The comments are rolling in in response to the cookbook give away. Your fabulous ideas make me want to rent a delightful, impractically located venue and throw a great big bash. (If you missed the post, Rose Murray's wonderful A Taste of Canada is up...

Pumpkin Pie Ice Cream with Maple Syrup - The Messy Baker
Pumpkin Pie Ice Cream

A while ago, Cari from Dinnervibe suggested I make a Halloween-themed ice cream. As you know, it doesn't take much to persuade me to whip out my Cuisinart, so even though the weather is turning cold, I accepted her ice cream challenge. Perhaps I'm in a...

Matar Paneer - The Messy Baker
Matar Paneer

I got out the good china and fancy napkins for this one. Not that matar paneer is an elaborate dish or extremely challenging. Instead, this recipe is a long, long overdue thank-you to fellow writer and Indian cuisine lover, Lora Shinn. But why am I polishing the...

Green-Tomato-Marmalade-square
Green Tomato Marmalade

Despite the amber hue of the resulting preserves, this is green tomato marmalade. And no, I didn't use the teeny-tiny yellow tomatoes on the left. They're just there for show. Instead, I used small to mid-sized green tomatoes like the ones below. I figured since I...
