09 Mar Wordless Wednesday: My newest obsession

Golden beets are a bit of a curiosity to me. With a dark, orange-toned skin and bright gold inside, they remind me of a peach. Raw, they taste a bit like carrots. Cooked? Haven’t a clue. I’m easing into beets and don’t want to push it. The one thing that impresses me most so far is their juice doesn’t leave my hands looking like I’d sacrificed a small animal.

Anyone use golden beets? I’d love to hear how they compare to their ruby, finger-staining counterpart.

    I love golden beets, especially roasted. My favorite way to eat beets is to roast them along with some chioggia beets (looks like a candy cane), which is also a non-staining type.     I love Golden Beets. They are sweet but don’t have that strong “iron” taste that the red ones do.
    Roast them and slice them up to serve with a salad of arugula and chevre.

      Great suggestion, Carrie. Thanks. I’m also glad to hear they don’t taste as strong as red beets. They smelled less pungent raw, but you never know how cooking will alter something.

    I like beets any way they come; soup, salad, pickled, hot, etc. and any colour. Hmm, are we really sisters? Your enjoyment of the golden beet seems to follow a food trend as I have had them out in resturants twice lately. The first time I couldn’t figure out what I was eating.
